For The Dough
1 1/2 cups plain flour (maida)
1 1/4 tsp instant dry yeast
1 tsp sugar
2 tbsp finely chopped garlic (lehsun)
1/2 tsp dried oregano
2 tbsp soft butter
1/2 tsp dry red chilli flakes (paprika)
salt to taste

For The Spice Mixture
1/4 tsp freshly ground black pepper (kalimirch)
1/4 tsp dried basil
1/4 tsp dried rosemary
1/2 tsp dried thyme
1 tsp dry red chilli flakes (paprika)
1 tsp garlic (lehsun) powder
1/8 tsp salt

To Be Mixed Into Garlic Butter Mixture
1 1/2 tsp garlic (lehsun) paste
2 tbsp melted butter

Other Ingredients For Dominos Style Garlic Bread Sticks
maize flour (makai ka atta) for dusting and rolling
8 tsp melted butter for brushing

For the dough

    For the dough
  1. Combine the yeast, sugar and 2 tbsp lukewarm water in a small bowl, mix well cover it with a lid and keep aside for 10 minutes.
  2. Combine the plain flour, garlic, oregano, butter, chilli flakes, yeast-water mixture and salt, mix well and knead it into a soft dough using enough warm water.
  3. Transfer the dough into a greased bowl and cover it with a damp muslin cloth and keep aside for 1 hour.

  1. Combine all the ingredients in a mortal pestle (khalbatta) and pound till coarse. Keep aside.

  1. Dust a clean dry surface with little maize flour, place the dough over it and knead it till smooth.
  2. Divide the dough into 2 equal portions.
  3. Roll a portion of the dough into a 175 mm. (7”) diameter circle using a little maize flour for rolling.
  4. Spread ½ of the garlic butter mixture on one side of the circle, leaving the edges.
  5. Cover it with the other half of the dough to make a semi-circle and press it well to seal the edges completely.
  6. Repeat step 3 to 5 to make one more garlic bread.
  7. Place them on a baking tray, cover it with a damp muslin cloth and keep aside for 30 minutes.
  8. Slit vertically each garlic bread slightly at regular intervals using a sharp knife.
  9. Brush 2 tsp of melted butter over each garlic bread.
  10. Sprinkle the prepared spice mixture evenly over them, and bake it in a pre-heated oven at 200°c (400°f) for 25 minutes.
  11. Once baked, brush 2 tsp of melted butter over each garlic bread.
  12. Separate them along the slits to get strips and serve the dominos style garlic bread sticks immediately.

  11. Cover it with a damp muslin cloth and keep aside for 30 minutes. Allowing dough to rise twice results in a finer gluten structure than allowing it to rise once. This gives a better volume, a more mellow yeast flavour and a finer texture to the bread.
