Apricpot Yogurt Parfait recipe - How to make Apricpot Yogurt Parfait

Ingredients

800 gms plain curds (dahi)
1 cup powdered sugar
a pinch of nutmeg (jaiphal) powder
250gms sundried apricot
1 cup warm milk
10 to 12 dry roasted cashew nuts
toasted walnuts (akhrot) for serving

Method
    Method
  1. Hang the curds in a muslin cloth in a cool place for approx.3 to 4 hours until all the liquid (whey) has drained off, preferably overnight in the refrigerator.
  2. Soak the apricots in warm milk and keep aside.
  3. Toast the cashew nuts and grind along with the sugar to a fine powder.
  4. Puree the apricots and pass through a sieve to have a smooth puree.
  5. Combine the hung curds, powdered sugar, cashew nuts and nutmeg powder in a mixer jar and blend till it smooth and creamy.
  6. Pour this mixture into small glass upto half of the glass.
  7. Pour in the Apricot puree. Refrigerate, uncovered, till the time of service.
  8. Serve topped with chopped apricots and toasted walnuts.
