Baked Mexican Rice with Cheese Patties is simply party perfect! Although it involves preparing the Mexican rice, cheese patties and a special tomato sauce too, each of these is quite easy to prepare and will not take too much time. You can prepare all these in advance and arrange them in a baking dish, ready to be stowed into the oven just a while before the guests arrive. Watch their faces light up as the aroma of tomatoes, onions, melting cheese and browning rice waft out of the oven tantalizingly.

Ingredients


For The Mexican Rice
3 cups cooked long grained rice
1 tbsp oil
1/2 cup finely chopped onions
1/2 tsp ginger (adrak) paste
1 tsp garlic (lehsun) paste
1/2 cup chopped and boiled french beans
1/2 cup chopped and boiled carrot
1 tsp chilli powder
salt to taste

For The Cheese Patties
1/4 cup grated processed cheese
1 cup boiled , peeled and mashed potatoes
1/2 cup crumbled paneer (cottage cheese)
2 tbsp finely chopped coriander (dhania)
2 tsp finely chopped green chillies
1 tbsp cornflour
salt to taste
oil for greasing and cooking

For The Tomato Sauce
1 1/2 cups fresh tomato pulp
1 tbsp oil
1/2 cup finely chopped onions
1 tsp garlic (lehsun) paste
1/2 tsp chilli powder
1/2 tsp dried oregano
1/2 tsp sugar
salt to taste

For The Topping
1/4 cup grated processed cheese

Method
For the mexican rice

    For the mexican rice
  1. Heat the oil in a deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes.
  2. Add the ginger and garlic paste and sauté on a medium flame for a few seconds.
  3. Add the french beans, carrots and chilli powder, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Add the rice and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.

For the cheese patties

    For the cheese patties
  1. Combine all the ingredients in a deep bowl and mix well.
  2. Divide the mixture into 12 equal portions and roll each portion into a 50 mm. (2”) diameter flat round patty.
  3. Heat a non-stick tava (griddle), grease it with a little oil, place all the patties on it and cook on a medium flame, using a little oil till they turn brown in colour from both the sides. Keep aside.

  1. Heat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 2 minutes.
  2. Add the tomato pulp, chilli powder, oregano, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

How to proceed

  1. Just before serving, spread the rice on a greased deep baking dish.
  2. Place the cheese patties over the rice and evenly spread the tomato sauce.
  3. Top it with cheese and bake in a pre-heated oven at 200°c (400°f) for 10 minutes.
  4. Serve hot.

My kids loved this recipe! it was yummy! flavours of oregano in the tomato sauce with melting cheese patties in the mouth,kids didn''t realise they ate the veggies along. I tried this with corn and spinach too instead of carrots and beans , again the dish came out tasty and healthy! I love your receipies and was never disappointed with any. Thanks a lot for sharing this one. whenever I get bored with routine stuff I pull out something interesting from your receipies and whoa! kids want me to start a restaurant now;)
