Brinji Rice

A lovely rice recipe ,Brinji rice is prepared in a rice cooker with the fried onions, tomatoes, brinji leaves and ginger garlic paste added to the raw rice and then cooked together. Enjoy the brinji rice piping hot with fresh coriander leaves as garnish.

Ingredients


2 cups long grained rice (basmati)
2 to 3 tbsp butter for frying the rice
2 onions, finely sliced
4 to 6 green chillies, slit lengthwise
1 tsp fennel seeds (saunf)
2 bayleaves (tejpatta)
a sprig of curry leaves (kadi patta)
4 to 5 cardamoms (elaichi)
6 to 8 cloves (laung / lavang)
2 (1" long pieces) cinnamon (dalchini)
12 to 15 mint leaves (phudina)
8 to 10 cloves garlic (lehsun)
1 " piece ginger (adrak) or you can use 1 tbspn. ginger-garlic (adrak-lehsun) paste
4 to 6 tbsp oil

For Garnishing:
2 to 3 tbsp finely chopped coriander (dhania)
salt to taste

Method

  1. Wash rice, drain well,
  2. Fry in butter on low flame for 8-10 mins till rice is crisp -
  3. Put into the electric cooker bucket & keep.
  4. In a kadai (wok) add oil
  5. When hot add the whole spices, bay leaves, curry leaves & fry till the cloves pop up,
  6. Now add the onions & fry till brown,
  7. Lower flame -add slit green chillies, & ginger/garlic paste & fry for 3-4 minutes.
