Ingredients



For the crust:
2 cups plain flour (maida)
1 cup washed and finely chopped fenugreek (methi)
1/2 cup warm oil
warm water - just enough to make a dough
salt to taste
oil for deep frying

For the filling:
1 cup boiled potato cubes
1 cup green peas
1 tsp cumin seeds (jeera) powder
2 tsp coriander (dhania) powder
2 tsp fennel seeds (saunf) powder
1/2 tsp turmeric powder (haldi)
salt to taste
2 tsp ginger-garlic (adrak-lehsun) paste
2 tbsp oil
1 tsp mustard seeds ( rai / sarson)
1/2 onion, grated

Method

  1. Heat oil(2 tbsp) and add mustard seeds.
  2. When they splutter, add grated onion, ginger-garlic paste and fry for a minute.
  3. Add the dry powders(cumin,coriander,turmeric )and fry for a few seconds.
  4. Add boiled potatoes and peas. mix well. sauté till the curry turns dry.
  5. Keep aside.
  6. Mix salt, the chopped leaves and flour.
  7. Add warm oil and mix well.
  8. Now make a nice firm dough adding just enough warm water.
  9. Make lemon size balls out of the dough.
  10. Roll them out into flat round chapattis.
  11. Cut each chapatti into half.
  12. Each chapatti makes 2 samosas.
  13. Fold each piece to make cones.
  14. Fill the curry and seal the edges using little water.
  15. Deep fry on low flame .
  16. Serve the crisp hot samosas with any drink.
