Canned apricots are tasty and are an excellent gift. They can be canned as unpeeled halves or whole unpeeled fruits. Canned apricots are first sized, graded and pitted to maintain the uniformity and then canned in water, stir in the sugar, and add the spices, if you're using them. Commercial canned apricots often have a much fuller flavor than fresh apricots from the market. This is because the apricots are left on the tree longer to ripen and naturally develop more flavors. The loss of nutrients during the canning process is negligible.

How to Select
To can them at home, choose firm-fleshed, blemish-free, and ripe -- with that golden orange-red glow apricots have, and smelling richly of apricot. It is also available in food markets. If purchasing, check the manufacturing as well as the expiry date, to ensure the freshness of the cookies. Also, make sure the seal of the packet is packed properly without any hole

Culinary Uses
· Canned apricot are used a s a dessert dish.
· They can also be added to flavour sauces or salads.

How to store
If made at home, Bottle in sterilized bottles discarding the spices and seal immediately; stored in a cool, dark place, this sauce should keep for 12 months. Keep an eye on the expiry date, if purchased from the market.
