What is cornmeal?

Cornmeal is made by grinding dried corn kernels into one of three textures: fine, medium, and coarse. Cornmeal is a meal (coarse flour) ground by grinding the dried kernels of maize, or corn. It's used to dust the pizza dough while shaping which acts a protective layer between the crust and baking tray, it avoids burning.

While selecting a good quality cornmeal, it should be pale yellow or white in colour. It should be a medium coarse powder.

How to store cornmeal

Store the cornmeal in an air tight container, in a cool, dry and dark place. Do not store it in the refrigerator, warm or damp place or in sun light it may cause bad odour, may also grow mold and loose its flavour.
