What is spaghetti sauce?

Spaghetti comes in an amazing variety of shapes and forms, which can be sauced in an equally varied number of ways, from refreshing pesto to hearty meat or Alfredo. A spaghetti sauce is any of a very large number of sauces made primarily out of tomatoes and seasonings. Spaghetti sauces are common for meat and vegetables, but they are perhaps best known as sauces for spaghetti dishes. The simplest sauces consist just of chopped tomato flesh (with the skins and seeds optionally removed), cooked in a little olive oil and simmered until it loses its raw flavor, and seasoned with salt, oregano, basil, parsley and pepper. Onion and garlic are almost always sweated or sautéed at the beginning before the tomato is added. The exact composition differs with the brand and may contain black olives, chili peppers, etc.

How to select spaghetti sauce

Always check the expiry date and look out for any discoloration or gas formation (bubbles) in the bottle, especially near the tip. The best tasting pasta sauces are typically made at home While preparing spaghetti sauce at home, go for Roma tomatoes as they have fewer sides, thicker, meatier walls, and less water. And that means thicker sauce in less cooking time! Also, stay away from mushy, bruised or rotten tomatoes.
