Ingredients


For Green Dal Fry
1/4 cup toovar (arhar) dal
1/4 cup yellow moong dal (split yellow gram)
1/2 tsp turmeric powder (haldi)
2 tbsp oil
salt to taste

For The Green Paste
1 cup roughly chopped coriander (dhania)
1/4 cup thinly sliced onions
1/4 cup freshly grated coconut
1 tbsp roughly chopped green chillies
1/2 tsp roughly chopped ginger (adrak)
1 tbsp roughly chopped garlic (lehsun)
1 tsp lemon juice

Method

  1. Combine all the ingredients and grind in a mixer to a coarse paste adding a little water if required. Keep aside.

  1. To make the green dal fry, clean, wash and soak the dals in enough water for about 30 to 45 minutes. Drain well.
  2. Combine the soaked dals, 1 cup of water, salt, turmeric powder, mix well and pressure cook for 3 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Heat the oil in a broad non-stick pan, add the prepared green paste and sauté on a medium flame for 3 to 4 minutes.
  5. Add the prepared cooked dal, 3/4 cup of hot water and salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  6. Serve the green dal fry hot.

  1. To make green dal fry, we will first make a lush green paste. For that clean and wash a bunch of coriander.
  2. Roughly chop it and measure a cup.
  3. Transfer the roughly chopped coriander to a mixer jar.
  4. Add thinly sliced onions.
  5. Add freshly grated coconut. You can keep the brown skin intact or remove it before grating.
  6. Add green chillies.
  7. Add ginger. If you do not have fresh adrak mirch then add ginger-green chillies paste.
  8. Add garlic.
  9. Add the lemon juice. This helps in maintaining the bright green colour of the paste.
  10. Add approx. 5 tbsp water
  11. Grind to a coarse paste. Keep aside.

  17. Add salt. Add more or less water as per the consistency you would like. The salt has been added while cooking the dal too, so be cautious while adding salt at this stage.
  18. Mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.

A good dal with a tempering of just the green paste and no other spices or condiments required. Don't forget to add lemon juice to the paste as it is necessary for that green colour of this dal.
