Ingredients


For The Paneer
2 cups paneer (cottage cheese) , cut into cubes
2 tbsp olive oil
2 tbsp coriander (dhania) seeds
1 tbsp dry red chilli flakes (paprika)
2 tsp dried oregano
2 tsp dried basil
2 tsp dried rosemary
1 tsp dried thyme
salt to taste

For The Spicy Cream
1 medium mango
1/2 cup chopped coriander (dhania)
1/2 cup clear vegetable stock
1/3 cup olive oil
1 tbsp lemon juice
1 tbsp lemon zest
1 1/2 tsp chilli powder
3 tsp crushed garlic (lehsun)
1 onion , grated
salt to taste

Method
For the paneer

    For the paneer
  1. Roast the coriander seeds in a dry pan for a minute.
  2. Cool and blend the coriander seeds along with chilli flakes into a coarse powder.
  3. Add the oregano, basil, rosemary, thyme and salt and mix well.
  4. Brush each side of the paneer cubes with oil and roll them into dry powder till they are evenly coated from all the sides.
  5. Grill the paneer pieces in a pre-heated griller till they turn golden brown from all the sides.
  6. Keep aside.

For the spicy mango cream

    For the spicy mango cream
  1. Blend the mango in a mixer till smooth.
  2. Add the remaining ingredients and blend again till smooth.
  3. Keep aside.

How to serve

    How to serve
  1. Place a spoonful of mango cream on each paneer slice and serve immediately.
