  1. Clean, wash and soak the brown rice in a bowl for 15 minutes. Drain and keep aside.
  2. Combine all the ingredients including the brown rice in in a kadhai or a handi, mix well and keep aside to marinate for 30 minutes.
  3. Add 3 cups of hot water and mix well.
  4. Cover with a lid and cook on a medium flame for 30 minutes or till the rice gets cooked, while stirring occasionally.
  5. Serve hot garnished with coriander.

  2. Add 1/4 cup green peas.
  3. Add 1/4 cup chopped onions.
  4. Add 1/4 cup finely chopped coriander (dhania).
  5. Add 1/4 tsp turmeric powder (haldi).
  6. Add 1 tsp coriander-cumin seeds (dhania-jeera) powder.
  7. Add 1 tsp chilli powder.
  8. Add 1 tsp ginger-green chilli paste.
  9. Add 1/2 tsp garlic (lehsun) paste.
  10. Add clove (laung / lavang).
  11. Add cardamoms.
  12. Add bayleaf (tejpatta).
  13. Add 50 mm (2") piece of cinnamon (dalchini).
  14. Add soaked brown rice.
  15. Add salt to taste.
  16. Mix well.
  17. Keep aside to marinate for 30 minutes.

Due to vegetables, brown rice and no oil, its a very healthy recipe.The spices gives an authentic taste to it. I liked the recipe!

This is a long grain rice khichdhi tossed in with cauliflower, potatoes and green peas and onions. Very mildly spiced.

is it realy true cooking in iron utensils increase iron content of a recipe? can i use pressure cooker to make this recipe..is it still iron rich?
