Lemon Dill Dressing

Dill is unique – it is very aromatic, and has a delicate flavour that is mildly sweetish. This makes it a wonderful addition to salad dressings, especially when combined with a peppy ingredient like lemon. This lemony dressing has a mixed flavour, thanks to the teamwork of lemon juice and rind, dill leaves and mustard paste, balanced by other ingredients like sugar, salt and oils.




The Lemon Dill Dressing not only improves the flavour and aroma of your salad, but also gives it a wonderful mouth-feel. Make a batch of this dressing, and store it in the fridge in an airtight glass jar for three or four days.

Ingredients

1 tbsp lemon juice
1 tsp lemon rind
1/4 cup finely chopped dill leaves
2 tsp whole grain mustard paste
1/2 tsp powdered sugar
1/2 tsp sea salt
1/4 cup vegetable oil
1/4 cup olive oil

Method
    Method
  1. Combine the lemon juice, lemon rind, whole grain mustard paste, sugar and salt in a deep bowl and whisk well.
  2. Add the vegetable oil and olive oil gradually to the mixture while whisking it continuously using a whisk.
  3. Add the dill leaves and mix well.
  4. Use as required.

CB - lovely dressing! I used Coleman''s English mustard, but it tasted nice. Might have been tastier with coarse mustard!
