This is a twist on a traditional chutney made on the occasion of Tamil New Years day. Its a wonderful combination of sweet, sour, bitter and spicy tastes.

Ingredients

1 raw mango
2 tsp oil
1 slit green chilli
2 red chillies
salt to taste
1/3 cup jaggery (gur)
1 cup water
1 tsp rice flour (chawal ka atta)
1/2 tsp neem flowers (optional)

Method
    Method
  1. Remove the mango skin and chop mango into small pieces.
  2. Heat oil in a pan and fry the mango pieces, red chillies, green chili for 15 minutes
  3. Add 1 cup water, jaggery and salt. Cook until mangoes turn soft. It takes about 10-15 minutes
  4. Take rice water and add little cold water to make it a thick paste
  5. Add it to the above mango mixture and cook until it thickens
  6. Roast enema flowers on the side.
  7. Grind the mango mixture coarsely after it has cooled down.
  8. Optionally, roast enema flowers in little oil and garnish the dip with it.
  9. Serve it with chips, crackers or mini toasts.
