Grated coconut is cooked to perfection with sugar, milk and ghee to make this all time favourite barfi. Be very careful whilst cooking this dessert as even a few extra seconds can cause the barfi to harden up.

Microwave Coconut Barfi recipe - How to make Microwave Coconut Barfi

Ingredients

1 cup fresh grated coconut
1/4 cup milk
3 tbsp sugar
1 tsp cardamom (elaichi) powder
a few drops saffron colour
2 tsp ghee

Method
    Main procedure
  1. In microwave safe bowl, mix together the ghee and fresh coconut and microwave on high for 2 minutes, stirring once after 1 minute.
  2. Add the milk, sugar, cardamom powder and yellow colour and microwave on high for 2 minutes, stirring once after 1 minute.
  3. Remove and spread the mixture onto a greased thali with a 125 mm. (5") diameter and allow it to set for 1 hour. Cut into rectangles and store in an air-tight container.

I came across this site by typing ‘choc barfi’ on Google. How fortunate! I never knew a ton of recipe was out there on the internet, by someone no less than Tarla Dalal. My bhabhi has a book by you, which is probably thirty years or more old. She cooks from those recipes quite often. I am going to forward this link to her. She didn’t know about it. Imagine, TD recipes at your fingertips! I don’t think enough people know about this. You should definitely advertise, so they know about your site. Thank you for creating this website. Who knows, even I might have a go!
