Ingredients


For The Dough
2 cups plain flour (maida)
1/2 cup fresh curd (dahi)
1 tsp sugar
1/2 tsp baking powder
1/4 tsp baking soda
salt to taste
1 tsp oil

To Be Mixed Into A Stuffing
1 cup diced mozzarella cheese
1 tsp finely chopped green chillies
1/4 tsp dry red chilli flakes (paprika)
2 tbsp finely chopped coriander (dhania)
1/4 tsp chaat masala
salt and freshly ground black pepper (kalimirch) to taste

Other Ingredients
1 tsp black sesame seeds (kala til)
2 tbsp finely chopped coriander (dhania)
6 tsp butter
plain flour (maida) for rolling

Method

  1. To make chilli cheese naan recipe, combine 2 pinches of salt and little water in a small bowl. Mix well and keep aside.
  2. In a deep bowl, add plain flour, curd, sugar, baking powder, baking soda, salt and oil.
  3. Knead into a soft dough using ¼ cup warm water. Cover with a damp muslin cloth and keep aside in a warm place for 1 hour.
  4. Once rested, divide the dough into 6 equal portions.

  1. Divide the stuffing into 6 equal portions. Keep aside.
  2. Roll out a portion of the dough into a 75 mm. (3 inch) diameter circle using a little plain flour for rolling.
  3. Place a portion of the stuffing in the center of the circle. Bring together all the sides in the center and seal tightly.
  4. Flatten a little and sprinkle black sesame seeds and coriander over it.
  5. Roll again into a circle of 175 mm. (7 inch) diameter oblong shape with a little plain flour for rolling.
  6. Heat a non-stick tava (griddle) on a high flame and when hot, sprinkle the salt-water and do not wipe it.
  7. Apply water on one side of the rolled roti and place the wet side facing downwards gently on a hot tava.
  8. Cook it till small blisters appear on the surface. Flip the tava on an open flame and cook again while rotating the tava till brown spots appear.
  9. Remove from the flame and apply 1 tsp tsp of butter. Repeat steps 2 to 8 to make 5 more naans.
  10. Serve chilli cheese naan immediately.

  5. Add salt and mix well.
  6. Knead the dough until it is smooth.  If required, add lukewarm water but make sure the dough is soft but not sticky.
  7. Cover the dough with a lid or damp muslin cloth and keep aside to prove for 30 minutes or until it increases in volume slightly.
  8. After 30 minutes, you will notice our dough has risen.

  1. Deflate the dough and knead the dough again to remove the excess air. Divide the dough into 10 equal portions.
  2. Take a portion of the dough and roll into a 75 mm. (3”) diameter circle using a little plain flour for rolling. Keep the rest covered to prevent them from drying.
  3. Place a portion of the stuffing in the centre of the circle.
  4. Bring together all the sides in the centre similar to the money bag.
  5. Seal tightly so the stuffing is secure inside.
  6. Roll again gently into a circle of 50 mm. (2”) diameter circle with a little plain flour for rolling. Don't roll it too thin or too thick. The folds made from sealing should no longer be visible and there should not be any gaps where the cheese stuffing can escape from.
  7. To cook chilli cheese naan on tava, heat a non-stick tava (griddle) and place the naan over it.
  8. Cook cheesy chilli naan bread on one side till it puffs slightly. 
  9. Then turn over and cook it on the other side till it puffs a little.
  10. Finally, roast it on an open flame till it turns golden brown in colour from both the sides.
  11. Remove cheese stuffed naan on a plate and keep it covered until you are done with the rest of the naans.

  13. Brush each naan with ½ tsp butter.
