Ingredients


100 gms sarasaparilla (nannari) roots
1 ltr water
1 kg sugar
6 lemons

Method

  1. Break the sarasaparilla roots into 1"-2" pieces.
  2. Dry very well in hot sun.
  3. Ligtly crush and remove the hard portion inside.
  4. Powder it fine in a dry grinder.
  5. Boil the water, remove from the stove and add this powder,mixing well.
  6. Leave for 8-10 hrs undisturbed. strain.
  7. Using fine muslin cloth, add sugar.
  8. Put on stove again.
  9. Heat stirring continuously ( to prevent sugar
  10. Sticking at the bottom) till you get a slightly sticky consistency.
  11. Remove, cool well and add juice from the lemons.
  12. More lime juice is optional.
  13. Thi preserves very well.
