Ingredients

1 cup cooked quinoa
1/2 cup blanched walnut
1/2 cup chopped peaches
1/2 cup baby spinach (palak) leaves , torn in small pieces
1 boiled sweet potato (shakarkand) , cut into small pieces

For Orange Vinaigrette
1/4 cup orange juice
2 tbsp balsamic vinegar
1 tbsp mustard (rai/ sarson) sauce
2 tsp honey
1/8 tsp freshly ground black pepper (kalimirch)
1/2 tsp red chillies sauce

    Method
  1. In a bowl, take quinoa, walnuts, peaches, spinach, sweet potato and mix well.
  2. In a glass jar take all the ingredients for orange vinaigrette and shake well.
  3. Now mix orange vinaigrette to mixed salad and toss well.
  4. Garnish with fresh mint leaves and serve chilled.
