Ingredients


8 to 10 small sized brinjals (baingan / eggplant)

for masala-
12 to 16 tbsp grated coconut or 12-16 tbsp, if you are using dry coconut flakes from indian store
3 to 4 tbsp peanuts
2 tsp coriander (dhania) seeds
1 tsp cumin seeds (jeera)
5 3/4 tsp chilli powder
1 1/2 tsp salt
1 to 2 tsp rasam powder or sambhar powder
1 small sized ball of tamarind (imli) (optional)
2 tsp sesame seeds (til)
2 to 3 big sized cloves of garlic (lehsun)

Method

  1. Put all the ingredients except the baingan of course in a blender starting with dry ingredients and adding less and less dry ingredients.
  2. Grind this into powder. taste this because whatever it tastes is the taste u get when u make the baingans.
  3. Cut the baingans stalk and make 4 slits in baingan longitudinally leaving one end intact so that u can stuff the mixture.
  4. Stuff the coconut mixture in the slit baingans. in a kadai take 1-2 tbsp of oil
  5. And u may add additional seasoning or u can omit.
  6. Then when the oil is hot add the baingans and stir it now and then for 5 minutes
  7. Then add water 3/4 cup and the remaining mixture and close the lid and let it cook for 10 minutes
  8. Now check if the baingans are cooked and also if the gravy consistency is to ur desire ( u can add water accordingly as much thick or thin gravy u want )
  9. If baingans are cooked and the gravy is to ur req consistancy then its done. ready to eat.
