Ingredients

3 cups boiled sweet corn kernels (makai ke dane)
1/2 cup chopped spring onions
1/2 cup tomato cubes
1/2 cup capsicum cubes

To Be Mixed Into A Vinaigrette Dressing
2 tbsp olive oil
1 tbsp vinegar
1/2 tsp mustard (rai / sarson) powder
1 tbsp sugar
salt and to taste

  1. To make american sweet corn salad, combine the sweet corn, spring onions, tomatoes and capsicum in a deep bowl and mix well.
  2. Pour the vinaigrette dressing over the salad, toss well and refrigerate for at least an hour.

How to remove corn from the cob

  1. If you have the entire corn cob then first remove and discard the green outer husk and silky threads.
  2. Trim the corn from one end so the corncob stands flat. To remove the kernels, cut down the corncob starting halfway. Now trim from the other end and repeat to remove all the kernels from the other half of the corncob. Keep aside.
  3. While frozen corn kernels are easily available all around the year, many people still prefer fresh corn kernels. Also, you get fresh sweet corn kernels packed in small packets at local vegetable market.

For the American corn salad:

  1. The easiest way to boil corn kernels is to cook in a pressure cook. Add enough water for 1 whistle. Alternatively, you can even boil the corn in a microwave or cook directly over a stove top.
  2. Add the corn kernels and cook for a whistle. This is not only the fastest way to cook but also prevents loss of nutrients. Avoid adding salt while cooking as it may cause the corn kernels to toughen up. Want a smoky flavor? Grill the corn instead of boiling before making this salad!
  3. Once the American corn kernels are boiled, drain them. Fresh corn kernels are preferable over the canned as they are naturally sweet and flavorful.
  4. Chop the spring onions (whites and greens), capsicum cubes, tomato cubes and keep them ready.
  5. In a deep bowl, transfer the boiled corn kernels.
  6. Add the spring onions. We will be using both greens and whites for this recipe.
  7. Add the tomatoes. You can even add cherry tomato halves to elevate the taste of the American corn salad.
  8. Add the capsicum. You can also toss in cucumber, avocados or bell pepper to increase the nutritional quotient of the dish.
  9. Mix well and keep aside.
  10. In another bowl or small glass jar, take the olive oil.
  11. To this add vinegar. Fresh lemon juice can be used as a substitute.
  12. Add the mustard powder. Dijon mustard works amazing as a substitute to mustard powder.
  13. Add the sugar. Honey can be used instead of sugar if you want.
  14. Add the salt and black pepper. Salt draws out all the flavors from the vegetables.
  15. Whisk well or put the lid and shake the bottle.
  16. Pour the prepared vinaigrette dressing over the salad.
  17. Toss well and refrigerate for at least an hour. Always pour the dressing just before serving the salad.
  18. Serve the American corn salad chilled.
