Badam Paak recipe - How to make Badam Paak

Ingredients
500 gms almonds (badam)
500 gms grated low fat mava (khoya)
500 gms sugar
1 1/2 cups ghee
10 cardamoms
1 nutmeg (jaiphal) , grated
2 cups ghee
Method
    Method
  1. Heat 1/2 the ghee in a pan, add the sugar and water and cook on a slow flame till sugar melts.
  2. Increase the heat slowly and let the syrup boil for a few mins.
  3. Add the remaining ghee and mava gradually stirring constantly.
  4. Add the sliced almonds and pure ghee and continue cooking till the mixture leaves the sides of the vessel.
  5. Remove from the flame, add the cardamoms and nutmeg when slightly cool.
  6. Spread on a greased thali and cut into squares.

Am planning to try this but am wondering which is the correct ghee amount?? Or do I really need 3.5lbs of ghee??? In which case I will skip this recipe cause that is a lot ghee plus the oil from the almonds!! :)
