Ingredients

1 brinjal (baingan / eggplant)
1/2 cup curds (dahi)
1/4 tsp oil for greasing
1 tsp roughly chopped green chillies
1/2 tsp garlic (lehsun) paste
1 tbsp finely chopped coriander (dhania)
salt to taste

Method
    Method
  1. Prick the brinjal with a fork at regular intervals, apply the oil evenly over it.
  2. Roast it on a medium flame till it turns black from all the sides.
  3. Remove the skin and roughly chop it.
  4. Blend in a mixer along with the green chillies till smooth. Keep aside.
  5. Combine the curds, garlic paste, coriander and salt in a deep bowl and mix very well.
  6. Add the baingan mixture and mix well.
  7. Refrigerate for atleast 1 hour and serve chilled.

This Baingan subzi hen mixed with curds and garlic and serve chilled with bajra rotla and dry garlic chutney is my fav meal. This recipe is def worth a try and also will be loved by all non baingan lovers as well.
