An interesting mix of spices perks up the taste of bajra in these famous rajasthani style rotis. While potatoes are used to help better bind the flour, be careful when you roll out the rotis so that they do not break.

Ingredients

2 cups bajra (black millet) flour
3/4 cup boiled , peeled and mashed potatoes
1/4 cup finely chopped onions
1/4 cup finely chopped coriander (dhania)
2 tsp ginger-green chilli paste
1 tsp dry mango powder (amchur)
1/2 tsp garam masala
salt to taste
bajra (black millet) flour for rolling
ghee for cooking

Method
    Method
  1. Combine all the ingredients in a deep bowl and knead into semi-soft dough, using enough warm water.
  2. Divide the dough into 6 equal portions and roll out each portion into a circle of 150 mm (6") diameter, using a little bajra flour for rolling.
  3. Heat a non-stick tava (griddle) and cook each roti, using a little ghee, till it turns golden brown in colour from both sides.
  4. Serve immediately.

Is it possible to roll out bajra atta like wheat atta. Won''t it break

   Hi Rithu, Bajra atta is little difficult to toll as compared to whole wheat flour but it will yet roll well. Do try the recipe and let us know how it turned out.. Happy Cooking !!

Bajra aloo roti.. i simply love this bajra and aloo combination..the crunchy onions.. and the tangy taste of amchur with the spices added is just the right amount.. and it goes well with masala curd.
