Vitamin A-rich spinach and carrots combine with bajra flour to make these filling parathas.

Garlic paste lends additional flavour. For variety replace carrots with cabbage and spinach with any other greens.

Have a go at other gluten free parathas like Moong Dal and Paneer Paratha and Three Grain Paratha .

  1. Combine all the ingredients in a deep bowl and knead into semi-soft dough using enough warm water.
  2. Divide the dough into 8 equal portions and roll out each portion into a circle of 100 mm (4”) diameter, using a little bajra flour for rolling
  3. Heat a non-stick tava (griddle) and cook each paratha using a little oil, till it turns golden brown in colour from both sides.
  4. Serve immediately.

This gluten free recipe is super delicious. Carrot and spinach goes really well with the bajra flour. At first i was confused how would it taste, but after trying it i was totally satisfied. So i am surely going to make this recipe again.
