1 ltr milk
35 ml lemon juice
100 gms butter
200 gms plain flour (maida)
200 gms sugar
4 tbsp (60ml.) honey
2 tsp cinnamon (dalchini) powder
1 tsp gelatine, melted
fresh cream as required


  1. Bring the milk to a boil.
  2. Add lime juice.
  3. When it curdles, strain through a muslin cloth.
  4. Mix the butter and flour till the mixture resembles breadcrumbs.
  5. Add ice cold water and bind to a smooth dough.
  6. Refrigerate the dough.
  7. Roll out the dough and line only the base of a pie dish with the dough.
  8. Bake a 150c for 10 to 15 minutes.
  9. Cream the chhenna, suger, two tbsp.
  10. Honey and cinnamon together in a mixer.
  11. Add melted gelatine.
  12. Pour the creamed mixture into the mould and refrigerate.
  13. When set, slice the cheesecake and serve cold.
  14. Serve the cheesecake slices along with fresh cream and the remaining honey.
