A wonderful snack to make when corn is in season. While the coriander and green chillies pep up the panki, the innate flavour is heightened by cooking it wrapped in banana leaves. Serve fresh and hot.

Corn and Coriander Panki recipe - How to make Corn and Coriander Panki

1 cup grated sweet corn kernels (makai ke dane)
1/4 cup finely chopped coriander (dhania)
2 tsp oil
salt to taste
1 tbsp finely chopped green chillies
2 tbsp semolina (rava)
1/4 cup besan (bengal gram flour)
16 banana leaves (kele ka patta) , (each of 5” roundels)
oil for greasing

For Serving
green chutney

  1. Combine all the ingredients along with 2 tbsp of water in a deep bowl and mix well.
  2. Apply a little oil on one side of each banana leaf and keep aside.
  3. Place a banana leaf with the greased side facing upwards, pour 2 tbsp of the batter over it and spread it evenly.
  4. Place another greased banana leaf with the greased side facing downwards over it and press it lightly.
  5. Cook on a non-stick tava (griddle) till light brown spots appear on both the sides of the leaf and the panki in between peels off the leaf easily.
  6. Repeat steps 3 to 5 to make 7 more pankis.
  7. Serve immediately with green chutney.

This was an amazing recipe.. I tried adding some grated coconut also for taste. The panki turned out non greasy and light..also it is very quick to make if you have all ingredients other you. To save banana leaves, we can make multiple Pankis in same leaf as well.

We don''t get banana leaves.. what is the alternative for banana leaves? Please suggest

   Hi Shweta, You can try like putting the batter in a dhokla plate and steaming it and seeing for a few minutes.

This is something new. Panki with corn and coriander is a real good combination. The panki has the perfect taste of corn with the coriander. It is soft and delicious..

Pankis are a favourite of my husband so I love trying variations...this variation of corn and coriander taste really very nice..
