Flavoured with parsley, crushed pepper and garlic, this unique tikki combines corn with crunchy veggies like red capsicum and onions, to make a truly out-of-the-world snack, which becomes all the more irresistible when topped with a freshly-prepared, tangy Barbeque Sauce.

Ingredients


For The Crispy Corn Tikkis
2 cups boiled and coarsely crushed sweet corn kernels (makai ke dane)
1 tbsp oil
1 tsp chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/4 cup finely chopped onions
1/2 cup chopped red capsicum
1/2 cup boiled and mashed potatoes
1/4 cup finely chopped parsley
salt and freshly ground black pepper (kalimirch) to taste
1 tbsp cornflour
oil for greasing and cooking

For The Barbeque Sauce
2 tbsp tomato ketchup
1 tbsp brown sugar
3/4 cup blanched , peeled and finely chopped tomatoes
1 tsp soy sauce
1/2 tsp chilli sauce
salt and freshly ground black pepper (kalimirch) to taste

Method
For the crispy corn tikkis

    For the crispy corn tikkis
  1. Heat the oil in a broad non-stick pan, add the garlic and green chillies and sauté on a medium flame for 30 seconds.
  2. Add the onions and sauté on a medium flame for 1 minute.
  3. Add the capsicum and sauté on a medium flame for 1 minute.
  4. Add the corn, potatoes, parsley, salt and pepper, mix well and cook on a medium flame for 1 minute.
  5. Transfer the mixture into a deep bowl, add the cornflour and mix well.
  6. Divide the mixture into 14 equal portions and roll each portion into a 50 mm. (2”) diameter circle.
  7. Heat and grease a non-stick tava (griddle) with oil and cook each tikki using little oil till they turn golden brown in colour from both the sides.

For the barbeque sauce

  1. Combine all the ingredients in a broad non-stick pan, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  2. Keep aside to cool.
