This Eggless Malai Cake has a has a pleasant colour and a rich, creamy texture derived from the interplay of maida and malai. Eggless Malai Cake recipe - How to make Eggless Malai Cake

2 cups plain flour (maida)
powdered sugar
1 cup cream
1 tsp vanilla essence
few drops lemon yellow colour
1 tsp baking powder
1/4 tsp baking soda
1 1/2 to 2 cups cold milk

  1. Combine the malai and sugar in a bowl and whisk well.
  2. Keep aside.
  3. Combine the plain flour, baking powder and baking soda and sieve 2-3 times and keep aside.
  4. Add the milk and maida mixture to the malai gradually and keep stirring.
  5. Gradually and alternatively finish the mixture and keep stirring.
  6. The mixture should be of the pouring consistency.
  7. Now add the vanilla essence and the food colour and lightly stir again once.
  8. Grease the cake mould and sprinkle little maida into it.
  9. Pour the batter into it and bake in a pre-heated cooker or oven for 30-40 minutes.
  10. Serve warm.

First time I followed this recipe and my cake came out to be excellent. But 2nd time while mixing malai and sugar mixture curdled and split. Please advise. Joginder

How much powdered sugar we have to take equivalent to maida ? You have not mentioned it''s quantity
