A rice kheer made special by addition of figs and dates. It is served cold, garnished with almonds and pistachios. If you want you can even serve it hot.

2 ltrs milk
3/4 cup long grained rice (basmati)
1/2 cup chopped figs (anjeer)
1/2 cup chopped dates (khajur)
a pinch of saffron (kesar) strands
1/2 cup honey
4 cardamoms (elaichi) , powdered

For Garnishing:
almond (badam) and pistachios

  1. Wash and soak the rice for ½ an hour.
  2. Put the milk in a heavy bottomed pan and allow to cool.
  3. Add the drained rice and cook for 10 minutes on a low flame.
  4. Now add the figs ,dates and saffron and cook till they are thick and creamy, stirring once in a while.
  5. Add honey and remove from fire.
  6. Sprinkle cardamom powder and nuts and refrigerate.
  7. Serve cold.
