The hakka noodles is a popular Chinese noodle preparation with a delectable combination of Chinese noodles with sauces. The vegetables and noodles are cooked together in a hot, sweet and sour sauce which is sure to tantalize your taste buds. A healthy accompaniment , salad or main course recipe, hakka noodle is best paired with chilli vegetable or Manchurian!

1 packet hakka noodles
2 tsp finely chopped garlic (lehsun)
2 tsp ginger (adrak), finely chopped
2 green chillies, finely chopped
1 whole dry kashmiri red chillies
1 small onion, sliced
2 spring onions, sliced
1/4 cup shredded cabbage
1/4 cup sliced carrots
1 tbsp chopped capsicum
2 eggs
1 cup cooked chicken pieces
1 tbsp chicken stock(optional) OR
1 maggie chicken cube
1 tbsp soy sauce
1 tsp chilli sauce
1 tsp vinegar
1/4 tsp pepper powder
1/4 cup spring onion greens
a pinch of M.S.G
3 tbsp oil


  1. Cook noodles as per instructions on the packet. drain and let cool.
  2. Add about a tsp of oil to the noodles and mix to prevent sticking.
  3. Heat a large vessel or wok. add 3 tbsp of oil. add the ginger-garllic, chilies.
  4. Sauté over high heat for a second. then add the onions.
  5. After 30 seconds add the veggies. add the ajinomoto.
  6. Cook for a minute.
  7. Now add the sauces, vinegar, chicken stock. (if using maggie cube, crush and mix with 2 tsp water)
  8. Last of all mix in the hakka noodles.
  9. Sprinkle pepper, adjust salt. add the spring onion leaves.
  10. Stir lightly for a minute and garnish with scrambled eggs or chicken cubes.
  11. Serve hot with extra chili sauce.
