Remember to roll the puris very thinly so they turn out crisp on deep-frying.

  1. Combine all the ingredients in a deep bowl and knead into a stiff dough using enough water.
  2. Divide the dough into 20 equal portions and roll each portion into a 50 mm. (2”) diameter thin circle using a little whole wheat flour for rolling.
  3. Prick the puris all over using a fork.
  4. Heat the oil in a kadhai, and deep-fry a few puris at a time, on a medium flame till they turn golden brown in colour from both the sides. Drain on an absorbent paper.
  5. Cool completely and store them in an air-tight container or pack in a tiffin box.

These crispy puris are made with a combination of coriander and methi along with spices that make these puris truly amazing...I store these often in air tight containers and enjoy them with a hot cup of tea.....
