Method

  1. First heat one teaspoon oil in a pan and fry brinjal pieces from both sides,sprinkle salt& pepper on cut side.
  2. Spread butter on bread slices.
  3. Place one layer of each vegetable in this order-lettuce, capcicum,tamato,onion,beetroot,cucumber,carrot,moong or alfa-alfa,brinjal,cheese and one olive on top.
  4. Cover with other bread slice.
  5. Toast the sandwich.
  6. Serve with sauce.
