Thai Green Curry is usually prepared with Galangal, and other underground vegetables. However, my recipe of pure jain Thai Green Curry works wonders as it tastes the same as the usual vegetabke one.

To Be Blended For The Green Curry Paste
1/2 cup chopped coriander (dhania)
4 green chillies
1 lemon grass stick (chopped)
1 tsp lemon rind
1/2 tsp dried ginger (soonth) powder
1/2 tsp coriander (dhania) seeds
1/2 tsp cumin seeds (jeera)
salt to taste
6 to 8 peppercorns (kalimirch)
1 tsp oil
1 tsp sugar

For The Curry
2 cups mixed boiled vegetables
2 cups coconut milk
1 cup tofu
2 tsp cornflour
2 tsp oil
1 tsp sugar
salt to taste

For curry

    For curry
  1. Sprinkle cornflour and salt on tofu cubes. Stir fry the tofu and immerse in water for sometime, drain water and keep aside.
  2. Heat oil in a pan and add the green curry paste, stir fry the paste for 3-4 minutes.
  3. Add coconut milk and bring it to a boil.
  4. Add salt and sugar to taste.
  5. Add all the vegetables and tofu to curry and bring back to boil.
  6. Serve hot with Jasmine Rice.

  1. Mixed vegetable can include vegetables like babycorn, mushrooms, capsicum, carrots, cauliflower etc.

It''s a yum recipe Have tried many a times Though I do add chopped celery and ginger for taste( if u use ginger ) It is very delicious and healthy too. Husband doesn prefer to eat out as restaurants don''t make very good Jain Thai curry
