For The Salsa
1 tbsp oil
2 cloves garlic (lehsun)
1 onion chopped
2 fresh red chillies chopped
1 green capsicum , chopped
1/2 tsp cumin seeds (jeera) powder
1 tsp red chilli powder
3/4 cup tomato puree
salt , pepper and juice to taste
fresh coriander (dhania) leaves , chopped

Other Ingredients
2 cups corn chips
2 jalapeno
2 tsp chilli oil
1 cup three colors bell peppers cut into thin strips
1 cup cooked vegetables of choice
1 cup mozzarella cheese , grated

  1. Preheat oven.
  2. Slice jalapenos peppers and keep aside.

For salsa

  1. Heat oil and sauté garlic and onion. Add red chillies, capsicum, roasted cumin powder, red chilli powder and tomato puree. Stir well and add salt, pepper to taste. Cook for two to three minutes and then remove from heat. When it cools, add lemon juice and chopped coriander leaves.
  2. In another pan, heat garlic and chilli flavored olive oil and add strips of red, yellow and green capsicums and vegetables of your choice.
  3. Add salt to taste and stir-fry for three to four minutes.
  4. Take a large baking dish and spread salsa on it. Spread vegetable layer.
  5. Crumble corn chips and sprinkle on salsa. Cover with grated mozzarella cheese.
  6. Place sliced jalapeno peppers and bake in the preheated oven for six to seven minutes or till cheese melts completely.
