Ingredients


For The Roti
1/4 cup whole wheat flour (gehun ka atta)
1/4 cup bajra (black millet) or jowar (white millet) flour
1/4 cup soya flour
1/4 cup quick cooking rolled oats flour
1 cup jaggery (gur)
1 tsp cocoa powder (optional)
1 tsp roasted sesame seeds (til)
3 tbsp milk
a pinch salt
1/4 tsp fruit salt
1 tbsp oil

For The Tikkas
2 boiled potatoes
1/4 cup soaked rice (chawal) flakes
1 cup chopped mixed vegetables
1/2 cup crushed sweet corn kernels (makai ke dane)
salt to taste
1/2 tsp chaat masala

Method
For the Roti

  1. Combine all the flours and salt in a bowl and mix well and keep aside.
  2. In a pan, combine the jaggery and little water and cook to a thin syrup.
  3. Combine the flour mix, syrup and milk in a bowl and make a thick batter of flowing consistency.
  4. Add the sesame seeds and oil, mix well and keeo aside for 30 to 45 minutes.
  5. Heat a non-stick tava, grease with little oil and pour a spoonful of batter and spread like a pancake and cook from both sides till it turns golden brown. Make 3 more rotis like this and keep aside.

  1. Heat the oil in a pan and add the vegetables and saute for 3-4 minutes.
  2. Add salt and cook on a high flame and toss well.
  3. Add the ginger-green chilli paste and mix well.
  4. Add the corn and cook for more 3-4 minutes.
  5. Add the potatoes, rice flakes and chaat masala and mix well.
  6. Cool and little and shape the mixture into small bit sixed circles and cook on a hot pan till golden brown from both the sides.
