  1. In a bowl put 1 cup maize flour (makai ka atta).
  2. Add 2 tbsp whole wheat flour (gehun ka atta).
  3. Add 1/2 cup chopped fenugreek (methi) leaves.
  4. Add 1 green chilli , finely chopped.
  5. Add salt to taste. We added 1/2 tsp salt.
  6. Use enough warm water to make a soft dough. We used 2/3 cup warm water. Note that makai takes more water in the dough.
  7. Knead into a soft dough.

  2. Flatten the dough and dust with whole wheat flour.
  3. Press the edges with your hands when you roll and rotate the dough. This you need to prevent getting broken edges for your roti.
  4. Roll out each portion into a 100 mm. (4”) diameter circle using a little whole wheat flour for rolling.  Rolling of the makai flour is always difficult. Keep turning the dough while rolling. If it stick add whole wheat flour. Note that when you roll, do it very gently with a rolling pin. If you apply extra pressure, your roti will break apart. 
  5. Heat a non stick pan and grease with oil.
  6. Place the uncooked roti on it. 
     
  7. Cook the bottom of the roti for 30 seconds on medium heat. 
  8. Then grease the top of the roti with little oil. 
  9. Flip over and cook the other side the same way.
  10. Remember to press the roti down with a spatula while cooking. Press gently all over to ensure uniform cooking.  
  11. Keep flipping the roti for a few seconds till it turns golden brown. Your roti is ready. 
  12. Place in a serving plate.
  13. Serve hot.
