Ingredients

5 cups chopped mixed vegetables (carrots, knol khol, radish , chow chow, onion, small onions, bittergourd, beans, capsicum)
1/2 raw mango
12 lemons
1 cup chilli powder
2/3 cup salt
3 tsp fenugreek seeds (methi) powder
1 tsp turmeric powder (haldi)
To temper:
1 cup sesame (til) oil
mustard seeds ( rai / sarson)
3 tsp asafoetida (hing)
Method


  1. Wash well & drain the vegetables.cut them.
  2. Chop 4 lemons & squeeze the other 8.
  3. Heat oil & temper as given.
  4. Add the vegetables & lemon pieces & fry a little.
  5. Then add chilli powder, salt, haldi & methi powder.
  6. Fry for a while.
  7. Remove from flame & cool.
  8. Add lime juice & mix well..
  9. Oil should cover completely.
  10. Peas, raw manathakkali & 50 gms garlic ( peeled) can be added raw.
