The dash of lime is perhaps the master stroke in this chutney, that enhances the flavour of all the other ingredients.


This handy chutney can be used in the preparation of several recipes including chaat, sandwiches and even Parathas , apart from being served as a delightful accompaniment to several Indian snacks.

Ingredients

2 cups roughly chopped mint leaves (phudina)
1 cup roughly chopped coriander (dhania)
4 green chillies , roughly chopped
1/2 cup thinly sliced onions (optional)
12 ginger (adrak)
salt to taste
2 tsp sugar
1 1/2 tbsp lemon juice

  1. Combine all the ingredients and blend in a mixer to a smooth paste using enough water.
  2. Serve immediately or refrigerate till use.

For making the onion pudina chutney

  1. For making the onion pudina chutney, take a fresh bunch of phudina. An aromatic bunch with bright green leaves indicates the mint is fresh.
  2. Remove the leaves from the stem and discard the stems.
  3. Place the clean mint leaves in a strainer and wash them under running water.
  4. Place the mint leaves on a chopping board and roughly chop them.
  5. Put them in a cup and measure 2 cups.
  6. Also, take the coriander bunch.
  7. Place it on a chopping board, cut the thick stem.
  8. Separate the good leaves and place them on a colander.
  9. Wash the dhania leaves.
  10. Chop the coriander roughly, measure 1 cup and keep aside.
  11. For the Punjabi style green chutney, in a chutney jar, add the mint leaves.
  12. Now, transfer the coriander.
  13. Furthermore, add the green chillies. The quantity can be adjusted to suit your palate.
  14. Add the onions. They provide volume to the onion pudina chutney.
  15. Add the ginger. Peel and roughly chop the adrak before adding.
  16. Add salt
  17. Add the sugar.
  18. Next, add the lemon juice. On preserving, the lemon juice will help in maintaining the lush green colour.
  19. Add around ¼ cup of water.
  20. Blend to get a smooth mint and onion chutney.
  21. If not using immediately, transfer the onion pudina chutney to a clean airtight container.

   Hello, only the change in onion pudina chatni I have done is instead of raw onion I sauté onion. Because I don''t use raw onion in chutney form. And I got delicious chutney. And thanks for the same.
