Ingredients

For The Dough
2 1/4 cups plain flour (maida)
1 tbsp oil
salt to taste

For The Stuffing
2 tbsp oil
3/4 cup thinly sliced onions
1 3/4 cups shredded cabbage
1 cup bean sprouts
1 cup thickly grated carrot
1 tsp soy sauce
1/2 tsp sugar
salt to taste

Other Ingredients
plain flour (maida) for rolling
oil for cooking

For Serving
chilli garlic sauce
Method

For the dough

  1. Combine all the ingredients in a bowl, mix well and knead to make a semi-stiff dough using enough water.
  2. Cover and keep aside for at least 10 to 15 minutes.

For the stuffing

  1. Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add all the vegetables and sauté on a medium flame for another 2 minutes.
  3. Add the soya sauce, sugar and salt, mix well and cook on a medium flame for 1 more minute, while stirring occasionally.
  4. Divide the stuffing into 12 equal portions and keep aside.

  1. Divide the dough into 12 equal portions and keep aside.
  2. Roll a portion of the dough into 150 mm. (6”) diameter circle using a little plain flour for rolling.
  3. Place a portion of the stuffing in the centre of the circle, bring together all the sides in the centre and seal tightly.
  4. Roll again into a circle of 125 mm. (5”) diameter circle using a little plain flour for rolling.
  5. Heat a non-stick tava (griddle) and cook the paratha, using a little oil, till it turns golden brown in colour from both sides.
  6. Repeat steps 2 to 5 to make 11 more parathas.
  7. Serve immediately with chilli garlic sauce.

This recipe is a total quick fix up...I make it quite often but I replace maida rotis with whole wheat rotis and they taste equally good...the stuffing is not spicy but taste nice...one can add little spice in the stuffing if you like it spicy...
