Ingredients

1 (175 mm. (7") diameter) eggless chocolate sponge cake

For The Chocolate Mousse
1 cup roughly chopped dark chocolate
1/4 cup milk
1 tbsp powdered sugar
1 cup beaten whipped cream
1/4 tsp vanilla essence
2 tsp honey

To Be Mixed Together For The Soaking Syrup
4 tbsp sugar
1/2 cup water

For The Garnish
1/4 cup grated dark chocolate

Method

    For the chocolate mousse
  1. Combine the chocolate and milk in a microwave safe bowl and microwave on high for 1 minute. Remove and mix well until no lumps remain.
  2. Strain the mixture using a sieve and keep aside.
  3. Combine the sugar and ¾ cup of beaten whipped cream in a deep bowl and fold gently.
  4. Add the chocolate–milk mixture and fold gently.
  5. Add the vanilla essence and honey and fold gently. Keep aside.

  1. Slice the chocolate sponge cake horizontally into 2 equal layers.
  2. Place the bottom layer of the chocolate sponge cake in a loose bottom cake tin or on a serving plate and sprinkle half the soaking syrup evenly over it.
  3. Spread the chocolate mousse evenly over it, sandwich it with the top layer of the chocolate sponge cake and sprinkle the remaining half of the soaking syrup evenly over it.
  4. Garnish with grated chocolate and refrigerate for 1 hour or till set.
  5. Cut the cake into 6 equal wedges and serve chilled.
