1 1/2 cups shredded spinach (palak)
3/4 cup chopped iceberg lettuce
3/4 cup chopped spring onions (whites and greens)
1 tsp low-fat butter
1/2 cup low-fat milk , 99.7% fat-free
salt and to taste
2 pinches of nutmeg (jaiphal) powder

  1. Heat the butter in a pressure cooker, add the spinach, lettuce and spring onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add 1½ cups of water, mix well and pressure cook for 3 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Blend the mixture in a mixer till smooth. Transfer the mixture into a deep non-stick pan.
  5. Add the milk, salt, pepper and nutmeg powder, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  6. Serve hot.

Just loved the soup... no straining at all and cooked in a pressure cooker to maintain all the nutrients. In all a very healthy recipe.
