You would never have thought of this combination! but noodles tossed with spinach, cheese sauce and colourful vegetables results in an absolutely delightful treat.

Spinach Noodles recipe - How to make Spinach Noodles

Ingredients

1 cup spinach purée
3 cups boiled noodles
1 tbsp butter
2 tsp finely chopped garlic (lehsun)
1 cup finely chopped spring onion (whites and greens)
1/2 cup sliced red capsicum
1 cup milk
1/2 cup cheese spread
salt and freshly ground black peppercorns (kalimirch) to taste
2 tsp cornflour dissolved in 1 tbsp water

Method
    Method
  1. Heat the butter in a broad non-stick pan, add the garlic and sauté for a few seconds.
  2. Add the spring onions whites and capsicum and sauté on a medium flame for 1 to 2 minutes.
  3. Add the spinach purée, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  4. Add the milk and cheese spread, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  5. Add the salt and pepper, mix well and cook for 1 to 2 minutes.
  6. Add the cornflour-water mixture, mix well and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
  7. Add the noodles, mix lightly and cook on a medium flame for 1 to 2 minutes.
  8. Serve hot.
