For The Dough
3/4 cup plain flour (maida)
5 tbsp whole wheat flour (gehun ka atta)
2 tsp oil
salt to taste

For The Stuffing
1 1/2 cups chopped spring onions whites and greens
1 tbsp oil
2 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
salt to taste

8 tsp peanut oil for cooking

Method
For the dough

  1. Combine all the ingredients in a deep bowl and knead into a soft dough using enough water. Keep aside.

  1. Heat the oil in a broad non-stick pan, add the garlic and green chillies and sauté on a medium flame for 1 minute.
  2. Add spring onions and salt and sauté on a medium flame for 1 to 2 minutes. Keep aside.

  2. Divide the dough into 8 equal portions.
  3. Roll each portion into a 150 mm. (6”) diameter circle using a little whole wheat flour for rolling.

  5. Repeat steps 3 and 4 to make 3 more parathas.
  6. Heat a non-stick tava (griddle), place the paratha on it and cook on a medium flame, using 2 tsp of oil for each paratha till both sides turn brown in colour.
  7. Cut the spring onion paratha into pieces and serve immediately.

I was excited to try these paratha's as I am a great fan of the onion pancakes at China Garden... So I couldn't resist... And these were very close to my restaurant pancake experience... And plus a lot more healthier as these aren't fried.... And they are so tasty that they actually don't need any accompaniment...
