For The Salsa
2 large tomatoes , chopped
2 onions , chopped
1 large capsicum
2 capsicums , chopped
2 tbsp hot sauce
2 tbsp chopped coriander (dhania)
salt to taste
1 tbsp olive oil
3 tbsp mayonnaise

For Soya Quesadillas
300 gms cooked boiled soyabeans keema
4 whole wheat (gehun) rotis
2 tbsp soy sauce
1 tbsp dark soy sauce
4 tbsp tomato puree
2 tbsp chopped green chilies
1 tbsp chopped ginger (adrak)
2 tbsp chopped garlic (lehsun)
4 tbsp olive oil
2 tbsp butter
salt to taste
1/2 cup chopped coriander (dhania)
4 tbsp chopped onions
1/2 cup cheddar or grated processed cheese

For the salsa

  1. In a deep bowl mix chopped onions , chopped tomatoes , chopped capsicum, chopped cilantro, hot sauce, salt, lemon juice, olive oil and mayonnaise.

  1. Heat oil in a pan , add chopped garlic and ginger saute for half a minute.
  2. Add chopped onions and continue to saute on medium heat, when it turns golden colour add soya kheema and stir fry.
  3. Add tomato puree , soya sauce, dark soya sauce ,salt to taste and cook till give off a aroma. Remove from heat and set aside.
  4. Divide into 4 equal portions
  5. Place 4 whole wheat rotis on a clean dry surface and spread the cheese and stir fried soya kheema on one half of each roti and fold it over to make a semi-circle and press it lightly to seal the edges.
  6. Melt 1 tbsp butter in a pan and carefully place a quesadilla in the pan and cook , turning once until golden and little bubbles appear on both sides 4-5 minutes in all.
  7. Cut quesadillas into 4 wedges with a knife and serve with salsa.
