1 cup strawberries, halved
1 cup bananas, sliced

For the butterscotch sauce
1/2 cup sugar
1 tbsp butter
4 tbsp fresh cream
1/4 tsp vanilla essence
4 tbsp brandy for the flambe

For serving
2 scoops vanilla ice-cream

  1. Heat the sugar in a non-stick pan and allow it to caramelize to a light brown colour.
  2. Add ¼ cup hot water and allow it to mix with the caramel to make a syrup, over a slow flame.
  3. Add the butter and cream and mix well.
  4. Allow it to simmer for 5 to 7 minutes till it is of a syrupy consistency. Keep warm.

  1. Just before serving, toss the strawberries and bananas into the butterscotch sauce and bring to a boil.
  2. Pour onto a serving platter.
  3. Heat the brandy, ignite and pour over the butterscotch coated fruits.
  4. Serve immediately with whipped cream or ice-cream.
