This an evening snack.It is a combination of yam and peas.Outer covering is of yam and stuffing is of peas and other combinations.

Suran Matar Pattice recipe - How to make Suran Matar Pattice

Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving

Ingredients


For The Outer Covering
1 cup chopped yam (suran) (wash the yam, deskin and wash again with tamarind water)
salt to taste
1 tsp freshly ground black pepper (kalimirch)
1 tsp dried mango powder (amchur) powder
1 tsp sugar
2 tsp ginger-green chilli paste

For The Stuffing
1/2 cup boiled and semi crushed peas
1/4 cup grated paneer (cottage cheese)
1/4 cup grated processed cheese
salt to taste
2 tsp ginger-green chilli paste
1 tsp sugar
2 tsp lemon juice

Other Ingredients
oil for shallow frying
chaat masala as required
bread crumbs as required

green chutney

  1. Boil yam till soft and mash it.
  2. Mix all the ingredients in the bowl and keep aside.

For the stuffing

    For the stuffing
  1. Mix all the ingredients in a bowl and make small balls of small lemon size and keep aside.

How to proceed

    How to proceed
  1. Divide the yam mixture small orange sized balls.
  2. Flatten it on palm and place the peas stuffing in the centre.
  3. Gather the outer covering from all sides so as to cover the inner stuffing.
  4. Repeat to make more pattice.
  5. Roll the pattice on bread crumbs and shallow fry on a tava till golden and crisp.
  6. Sprinkle pinch of chat masala when hot and serve with green chutney.
