Firm ripe tomatoes are combined with cool cucumbers and crisp lettuce leaves tossed in low fat basil flavoured vinaigrette. Tomatoes provide vitamin A and fibre while lettuce and cucumbers contribute fibre as well as vitamin C and iron.

For the salad
2 cups tomatoes, quatered and deseeded
1 cup cucumber, sliced
2 cups lettuce leaves, torn into pieces

To be mixed into a dressing
1 tsp crushed garlic (lehsun)
1 tsp chopped fresh basil leaves
1 1/2 tbsp lemon juice
1 tsp olive oil
salt and black pepper (kalimirch) powder to taste

    Main Procedure
  1. Combine all the ingredients in a salad bowl and chill thoroughly.
  2. Just before serving, add the dressing and toss well.
  3. Serve immediately.
