Ingredients

200 gms rice noodles
1/4 cup oil
2 tsp chilli oil
1 tbsp chopped ginger (adrak)
3 red chillies
1/2 cup roasted cashewnuts (kaju)
225 gms canned babycorn
100 gms bean sprouts
1 tbsp soy sauce
2 tbsp thai sweet chilli sauce
2 tbsp chopped spring onions

Method
    Method
  1. Cook noodles in a large pan of simmering water until just tender and leave it to drain,
  2. Heat Oil in a wok or pan, add ginger, red chillies and cook over medium heat for 1 minute.
  3. Add cashews and toss for 1 minute or until golden.
  4. Add vegetables into the pan and cook over medium heat for 3 minutes until vegetables are tender.
  5. Stir in noodles and combined sauces. Toss until the noodles are heated through and all ingredients are combined.
  6. Serve immediately garnished with spring onions.
