Ingredients

3 cups Steamed Rice (Chawal)
1 " of cinnamon (dalchini)
2 cardamom (elaichi)
2 cloves (laung / lavang)
2 to 3 bayleaves (tejpatta)
1 tsp cumin seeds (jeera)
1 tsp ghee
salt to taste
1/2 cup grated cheese for baking

For the red layer
1 1/2 cups boiled mixed vegetables (carrots, french beans and green peas)
2 onions , chopped
1 large capsicums , chopped
8 medium sized tomatoes
1 tbsp grated garlic (lehsun)
2 tbsp tomato ketchup
1/2 tsp chilli powder
1 tsp sugar
1 tsp carom seeds (ajwain)
2 tbsp ghee
salt to taste

For the green layer
2 bunches of spinach (palak)
1 tbsp plain flour (maida)
1 cup milk
1 tbsp butter
1 tsp chilli sauce
salt to taste
Method



For the red layer

    For the red layer
  1. Heat the ghee in a kadhai, add garlic, onions and capsicum and sauté for 4-5 minutes.
  2. Put the tomatoes in boiling water for 10 minutes, peel and blend in a blender along with the ajwain. pass it through the sieve to obtain the puree.
  3. Add this puree to the sautéed onions along with the boiled vegetables, tomato ketchup, chilli powder, sugar and salt.
  4. Simmer for 5-7 minutes and keep aside.

For the green layer

  1. Wash the spinach leaves thoroughly with water and roughly chop them.
  2. Put the spinach leaves in boiling water for about 5-7 minutes, drain and blend in a blender
  3. Heat the butter in a pan, add the maida and stir continuously, then add the milk slowly, stirring continuously so that no lumps are formed.
  4. 4.add the spinach along with the chilli sauce and salt and keep aside.

For the rice

  1. Heat the ghee in a pan and add the cumin seeds along with the bay leaves, cinnamon, cardamom and clove.
  2. Add the boiled rice and salt.
  3. Take a baking dish and spread the spinach layer in it
  4. Then add the rice and after it the red layer.
  5. Sprinkle grated cheese and bake in an oven for 10 minutes at 160°c and serve hot.
