Tomato omelette sandwiches are an Indian sandwich recipe with the tomato paste and besan based pancakes tomato omelette) added as a filling in between the bread slices. Add wheat breads instead of white breads to have the right mix of carbohydrate( breads) and protein( omelette) on your plate.

1/2 cup besan (Bengal gram flour)
1/2 cup semolina (rava)
2 medium tomatoes
1 medium onion
2 green chillies
2 tbsp chopped coriander (dhania)
1/4 tsp turmeric powder (haldi)
3/4 tsp cumin seeds (jeera) powder
1/2 tsp carom seeds (ajwain) powder
salt to taste
2 tbsp oil
little oil for making omlettes

8 multi-grain or white bread slices
little butter
pickled cucumber (sweet & sour)/ cucumber
little tomato ketchup
philadelphia cream cheese


  1. Chop finely tomatoes, onion, green chillies, coriander and place them in a bowl.
  2. Add turmeric powder, cumin powder, ajwain powder, salt, oil, and 1 1/4-cup water and mix it well.
  3. Place a non-stick pan on gas, put little oil, and put 2-3 big spoon batter to make an omlette.
  4. On another non-stick pan/tava put some butter to toast the bread slices to crispy and light brown color.
  5. Turn the omlette upside down, if needed add some oil.
  6. Slice pickled cucumber. remove omlette and put batter to make second omlette and repeat for all omlettes.
  7. On one side of the toast put some ketchup, place omeltte, sliced cucumber, grated cream cheese (philadelphia), place some more omlette, put ketchup on other toast, and place it on the top.
  8. Cut the omlette and serve it hot.
  9. Repeat the procedure for all omlettes.
