1 1/2 cups unbleached plain flour (maida)
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup oil (I use 1/4 c oil, 1/4c applesauce)
1 cup cold water or brewed coffee (I use decaf coffee, the coffee
greatly enhaces)
2 tsp pure vanilla extract
2 tbsp vinegar


  1. Preheat oven to 375
  2. Mix flour, cocoa, soda, salt and sugar into an ungreased 8 inch square
  3. Or 9 inch round baking pan. in a 2 cup measuring cup, measure and mix
  4. Together oil, applesauce, water/coffee, and vanilla. pour liquid
  5. Ingredients into the baking pan and mix the batter with a fork or small
  6. Whisk. when smooth, add the vinegar and stir quickly. there will be
  7. Pale swirls in the batter where the soda and vinegar are reacting. stir
  8. Just until vinegar is evenly distributed. bake for 25-35 minutes. set
  9. Cake aside to cool.
